- 12 oz kielbasa, cut into 1 inch chunks
- 1 1/2 pounds potatoes (yellow, red, or russet), cut into one-inch chunks
- 4 tbs olive oil
- 1/2 red onion, cut into 1-inch pieces
- 4 cloves garlic, minced
- 1 1/2 tsp salt
- 4 sprigs fresh thyme
- pepper, to taste

- Prepare pan and oven: Preheat the oven to 400°F and lightly grease a large roasting pan or sheet pan.
