Avocado Oil Mayonnaise Recipe

This avocado oil mayonnaise recipe is a quick and healthy homemade alternative to store-bought mayo. Made with just a few simple ingredients—egg, avocado oil, lemon juice, mustard, and salt—it blends into a rich, creamy spread in minutes. Perfect for sandwiches, dressings, and dips, it’s free from seed oils and preservatives, and packed with heart-healthy fats.

1 Immersion blender
1 Wide-mouth mason jar
- 1 Cup Avocado oil
- 1 Egg (at room temperature)
- 1 Tbs lemon juice or vinegar
- 1 tsp Dijon mustard
- 1 tsp Salt
Add the room-temperature egg, lemon juice or vinegar, mustard, salt, and two tablespoons of oil in a wide-mouth mason jar (see note 1).
Blend the egg mixture with the immersion blender on low until combined.
Slowly drizzle the avocado oil into the egg mixture, moving the blender up and down to incorporate ingredients.
Continue until all the oil has been used and you have a thick, creamy spread.
- Add just enough oil so the blades of the immersion blender are submerged.
