Biscuits and Gravy Casserole

This biscuits and gravy casserole is a cozy, crowd-pleasing breakfast made with fluffy biscuits, savory sausage, creamy homemade gravy, and a protein-packed egg mixture. It’s easy to prep, perfect for weekends or holidays, and bakes up golden, hearty, and comforting every time.

Ingredients
  

  • 6 biscuits from our Sourdough Buttermilk Biscuits (see note 1, or any biscuit dough you prefer)
  • 1 pound sausage, browned (pork or turkey)
  • 1 cup shredded cheddar cheese
  • 10 eggs
  • ½ cup cottage cheese
  • 4 tbs butter
  • cup flour
  • 3 cups whole milk
  • salt and pepper, to taste

Instructions
 

  • Prepare the biscuits: Preheat the oven to 350 degrees Fahrenheit. Grease a 9×13-inch baking dish. Pinch biscuit dough into about 1 tablespoon pieces and scatter them evenly across the bottom of the dish. The bottom does not need to be fully covered because the biscuits will expand as they bake.
  • Cook the sausage: In a large skillet over medium heat, brown the sausage until fully cooked. Use a slotted spoon to remove the sausage and scatter it evenly over the biscuit dough, leaving the grease in the pan.
  • Add the cheese: Sprinkle the shredded cheddar cheese evenly over the biscuits and sausage.
  • Make the gravy: To the same skillet with the reserved sausage grease, add the butter and melt over medium heat. Sprinkle in the flour and whisk continuously to form a roux. Slowly pour in the milk, whisking constantly to prevent lumps. Bring to a gentle simmer and cook until thickened. Season with a pinch of salt and pepper, then remove from heat and set aside.
  • Blend the egg mixture: In a blender, combine the eggs, cottage cheese, and a pinch of salt and pepper. Blend until completely smooth.
  • Assemble the casserole: Pour the egg mixture evenly over the biscuits, sausage, and cheese. Spoon the gravy over the top, spreading it gently to cover the surface.
  • Bake: Bake the casserole for 40-45 minutes, until the casserole is set in the center and the biscuits are cooked through. Let it rest for 5–10 minutes before serving.

Notes

  1. I used 6 of the 8 biscuits from our Sourdough Buttermilk Biscuits. It's tempting to use the whole batch of biscuits, but that will overpower the casserole and make it dry, so stick to 6. You can also use any prepared biscuit dough you prefer, just follow the same instructions!
