Date Bark (Dark Chocolate & Peanut Butter)
This easy date bark combines soft Medjool dates, creamy peanut butter, shredded coconut, and melted dark chocolate for a naturally sweet, no-bake treat. It takes just minutes to assemble, freezes quickly, and breaks into the perfect candy-style bark that’s healthier, delicious, and totally crave-worthy.

- 15 pitted medjool dates
- 1/3 cup peanut butter (warmed if it's been in the refrigerator)
- 1/4 cup shredded unsweetened coconut (can also use peanuts, almonds, or omit completely)
- 3/4 cup dark chocolate
- 1 tsp coconut oil
- flaky sea salt (for topping)
Prepare the Base: Line a cutting board or small baking sheet with parchment paper. Open each of the 15 Medjool dates and lay them flat, cut-side up, in tight, even rows so they touch.
Flatten the Dates: Place another piece of parchment over the dates and press firmly to flatten them into an even layer with minimal gaps (don't worry, some gaps are fine). Remove the top parchment.
Melt the Chocolate: In a double boiler, melt the dark chocolate and coconut oil together until smooth. Set aside.
Add the Layers: Spread the peanut butter evenly over the flattened dates. Sprinkle shredded coconut on top.
Add the Chocolate: Pour or spread the melted chocolate over the entire surface, making sure everything is covered. Sprinkle with flaky sea salt.
Chill: Transfer to the freezer and freeze for about 30 minutes, or until the chocolate is fully set.
Break Into Pieces: Remove from the freezer and break or cut into bark-style pieces.
Store: Store in an airtight container in the fridge for up to a week or in the freezer for longer storage.
