High Protein Quiche with Heirloom Tomatoes

Made with just six ingredients, including eggs, cheese, and juicy summer tomatoes, it’s an easy cottage cheese quiche recipe that’s perfect for meal prep or a laid-back weeknight dinner.

Equipment

  • 1 pie pan
  • 1 immersion blender or stand blender

Ingredients
  

  • 1 unbaked pie shell see note 1
  • 8 eggs
  • 3/4 cup cottage cheese
  • 1/2 pound sausage
  • 3/4 cup parmesan cheese, freshly grated
  • 1 heirloom tomato, sliced any tomatoe will work
  • salt and pepper, to taste

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Brown the sausage in a skillet over medium heat, breaking it up with a wooden spoon as it cooks. Cook for 5-7 minutes until it is no longer pink.
  • While the sausage cooks, combine the eggs and cottage cheese in a blender or a large pitcher with an immersion blender and blend until smooth. There should be no clumps remaining.
  • Scatter the cooked sausage in the bottom of the uncooked pie shell. Top the sausage with half of the grated parmesan cheese. Pour the egg and cottage cheese mixture over the Parmesan cheese. Top with the rest of the cheese and place sliced tomatoes over the top of the quiche. Sprinkle the tomatoes with salt and pepper.
  • Bake the quiche for one hour until the eggs are set. Enjoy!
