However, wherever you land on the mayo aisle, it’s time we acknowledge that my childhood self was right: conventional mayonnaise is disgusting and is ruining your health.

Mayo got a bad rap for a while because it’s high in fat, but the fat isn’t the problem. Our bodies need healthy fats for proper cellular growth, brain function, and hormone production (to name a few). The fat was never mayo’s problem.

The problem is what conventional mayonnaise is made of: industrialized seed oils.

What are Seed Oils?

This topic deserves its own post, but in a nutshell, seed oils are vegetable oils extracted from the seeds of plants like soybeans, corn, sunflower, safflower, cottonseed, and rapeseed. The extraction process typically involves high heat and chemical solvents like hexane, refining, bleaching, and deodorizing.

If you think that sounds scary and unnecessary, you’re right. There’s absolutely no need for such processing when oil can be easily extracted from avocados, coconuts, and olives.

While seed oils are marketed as “heart-healthy” because they’re low in saturated fat, they are high in omega-6 polyunsaturated fats (sometimes referred to as PUFAS), which contribute to inflammation, hormone imbalance, improper thyroid function, digestive issues, and countless other ailments.

It’s my deepest desire that after reading the above statement, you walk swiftly to your refrigerator and toss your fake, disease-causing mayonnaise directly in the trash.

Is Avocado Oil Mayonnaise Good for You?

Yes, avocado oil mayonnaise is good for you because it is a nourishing source of healthy fat that your body can properly digest and utilize. A few key health benefits of avocado oil are:

  • 1. Heart Health. Avocado oil is rich in monounsaturated fats, particularly oleic acid, which can help reduce bad LDL cholesterol while increasing good HDL cholesterol. This supports overall cardiovascular health and lowers the risk of heart disease.
  • 2. Anti-Inflammatory Properties. Oleic acid and antioxidants in avocado oil, such as vitamin E and carotenoids, have anti-inflammatory effects. This can help reduce chronic inflammation linked to arthritis, obesity, and heart disease.
  • 3. Nutrient Absorption. Avocado oil’s healthy fats help your body absorb fat-soluble vitamins (A, D, E, and K) and antioxidants from other foods more effectively, especially when used in salads or dressings.
  • 4. Skin and Eye Health. Avocado oil contains lutein, an antioxidant that supports eye health, and vitamin E, which helps nourish and protect the skin from oxidative damage.

Avocado oil mayonnaise also contains an egg. Eggs are another food that got a bad rap for a while because of the cholesterol content, but they’re choc-full of so many nutrients it’s almost silly to avoid them.

They’re an excellent source of high-quality protein, containing all nine essential amino acids needed for muscle repair and overall body function. Eggs are rich in B vitamins, especially B12 and riboflavin, which support energy metabolism. They also contain choline, which is vital for brain health and fetal development. The yolk is a good source of vitamin D, lutein, and zeaxanthin, antioxidants that promote eye health.

How to Make this Avocado Oil Mayonnaise recipe

Making avocado oil mayonnaise is super simple. All you need is a few ingredients, an appliance you already have in your kitchen, and the resolve to flee from industrialized seed oils.

Avocado oil mayonnaise ingredients:

  • Avocado oil
  • Egg (binds the oil and acid and gives the mayonnaise its rich color and smooth texture)
  • Mustard (adds flavor and acts as an emulsifier)
  • Lemon juice or vinegar (acid to balance the oil and acts as a preservative)
  • Salt (for flavor)

Equipment (you only need one!)

In the recipe below, I detail how to make avocado oil using an immersion blender. Here, I will explain how to make it using a blender or food processor.

I prefer using an immersion blender because it’s faster, quieter, and doesn’t scare my kids, but I have used my food processor with great results for years!

How to Make Avocado Oil Mayonnaise in a Food Processor or Blender

Start by adding one large room-temperature egg, one tablespoon of lemon juice or vinegar, one teaspoon of Dijon mustard, and a pinch of salt to the food processor bowl.

Pulse briefly to combine.

With the processor running at low speed, very slowly drizzle one cup of avocado oil through the feed tube or pour nozzle. Don’t rush! This slow pour is crucial—it allows the emulsion to form gradually, resulting in a thick, stable mayo.

Once all the oil is added and the mixture is smooth and creamy, taste and adjust the salt as needed.

Trouble Shooting

If your mayonnaise doesn’t come together properly, the culprit is most likely one of two things:

  • 1. You poured your oil too quickly.
  • 2. You used a cold egg.

While it’s crucial to pour the oil very slowly and use a room-temperature egg, hope is not lost! Follow my instructions for fixing broken mayonnaise, and you’ll be back on track in no time.

How to Fix Broken Mayonnaise

If you got a little heavy-handed pouring your oil, you probably ended up with a liquidy substance that doesn’t resemble mayonnaise.

Do not throw it out.

I’ve fixed many broken mayonnaises and am here to help.

All you need is one egg yolk at room temperature.

Add the egg yolk to your blender or food processor and slowly pour in the broken mayonnaise while the machine runs on low. The mayonnaise should emulsify and form a thick, creamy spread.

Because of the additional egg yolk, your mayonnaise will be a deeper shade of yellow. At this point, I like to think of it as extra-nutritious mayonnaise.

How Long Does Avocado Oil Mayonnaise Last?

Avocado oil mayonnaise is supposed to last a week in the refrigerator. I have used it past the one-week mark with no issues. Use your discernment!

What is the Best Avocado Oil for Mayonnaise

The healthiest avocado oil is cold-pressed, unrefined, and 100% pure, preserving natural nutrients and antioxidants. Look for non-GMO and ideally organic oil with no additives or blends. Cold-pressed extraction retains heart-healthy monounsaturated fats, vitamin E, and lutein, making it excellent for cooking and raw uses like salad dressings or homemade mayonnaise.

That being said, use what’s available and what best suits your budget!

Is It Safe to Use a Raw Egg?

Yes! I use a pasture-raised egg from our backyard chickens, but have also used conventional eggs from the grocery store with no issue.

Ingredients
  

  • 1 Cup Avocado oil
  • 1 Egg (at room temperature)
  • 1 Tbs lemon juice or vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Salt

Instructions
 

  • Add the room-temperature egg, lemon juice or vinegar, mustard, salt, and two tablespoons of oil in a wide-mouth mason jar (see note 1).
  • Blend the egg mixture with the immersion blender on low until combined.
  • Slowly drizzle the avocado oil into the egg mixture, moving the blender up and down to incorporate ingredients.
  • Continue until all the oil has been used and you have a thick, creamy spread.

  1. Add just enough oil so the blades of the immersion blender are submerged.
