My husband and I recently had a conversation about my lack of athleticism.

He’s one of those unicorns who can pick up a ball, stick, or racket and make it do whatever it’s supposed to do with very little effort. I love that for him.

I lack the natural abilities most athletes possess and the competitive drive to get better. Who honestly cares? Aren’t we all here for the post-game pizza?

I reminded him that I’ve not only borne him a few babies at this point (currently working on number 3), but I can also bake anything his heart desires. You can’t tell me that isn’t better than kicking a muddy ball around a field.

Anyway, as far as baking goes, I usually stick to sourdough. My son’s eczema and gluten intolerance threw a nice little wrench into my sourdough escapades, but then I started working with einkorn, and everything is right in the world again.

So far, I’ve only mastered a few einkorn flour recipes, but they’ve breathed life into our home and they’re so much simpler than you might think.

Why Bake with Einkorn Flour?

Whether you’re making bread, tortillas, muffins, or cookies, einkorn flour is a solid choice for your base. Many people are drawn to einkorn because of its rich, nutty flavor, simple ingredients, and simple gluten structure.

One of the biggest reasons people love einkorn is its taste. It has a naturally sweet, slightly nutty flavor that adds depth to both sweet and savory recipes. Even simple baked goods often have a richer flavor when made with einkorn flour.

Einkorn is also incredibly versatile. It can be used in everything from breakfast favorites and artisan breads to pizza dough, tortillas, and desserts (still tackling all of those areas for you guys). Once you become familiar with baking with einkorn, you’ll find countless ways to incorporate it into your kitchen.

Many people turn to einkorn flour for the same reason we did: they’re accommodating a gluten allergy. Not everyone with a true wheat allergy can tolerate einkorn flour recipes, but some people can so it’s worth a (very cautious) shot.

Tips for Baking with Einkorn Flour

If you’re new to baking with einkorn flour, a few simple tips can help you get the best results. Einkorn behaves differently than modern wheat flour, but once you learn its quirks, it’s easy to work with.

  • Start with proven einkorn recipes. It’s easy to want to swap your favorite recipes 1:1 for einkorn flour, but recipes specifically developed for einkorn flour will give you the best results since einkorn absorbs liquid differently than modern wheat flour.
  • Avoid adding too much flour. Einkorn doughs and batters are often softer and stickier than traditional doughs. Adding extra flour can result in dry or dense baked goods.
  • Mix gently. Einkorn doesn’t require extensive kneading or mixing. Overworking the dough can make it harder to handle and may affect the final texture.
  • Measure carefully. For the most consistent results, weigh your flour with a kitchen scale. If using measuring cups, spoon the flour into the cup and level it off rather than scooping directly from the bag.
  • Expect a softer dough. Many einkorn recipes produce doughs that feel wetter than what you’re used to. This is normal and often leads to tender, flavorful baked goods.
  • Be patient while learning. Every flour behaves differently, and einkorn is no exception. After a few recipes, you’ll become familiar with how it mixes, handles, and bakes.
  • Store einkorn flour properly. Keep einkorn flour in an airtight container in a cool, dry place. For long-term storage, refrigerate or freeze it to help maintain freshness.
  • Start with simple recipes. Tortillas, pancakes, muffins, and cookies are excellent beginner-friendly einkorn flour recipes that can help you build confidence before tackling yeast breads.
