I mentioned in our Fall Bucket List that soup has its own season for some folks, but this soup is less about the season outside and more about the season of life you’re in. This healthy chicken soup is less about the autumn season or chilly season, and more about a healing season.

If you’re recovering from surgery, illness, or have just given birth, this healthy chicken soup with bone broth and coconut milk is the recipe I recommend making on repeat. It’s packed with protein and nourishing bone broth to support immunity and tissue repair, while staying light and easy to digest. Unlike heavier meals, it won’t sit like a log in your belly while you rest and recover. Plus, the turmeric, ginger, and amino acids in the broth help reduce inflammation and promote healing from the inside out.

Basically, I hope this will become your go-to, feel-better-fast soup, the whole family will enjoy.

  • Perfect meal-train meal: This is my go-to meal to take to a friend who has just had a baby or is recovering from surgery. It’s warm, healing, and easy to digest.

What Makes This Soup Healthy

I’m all about using food as medicine, and this recipe is no exception. This Healthy Chicken Soup with bone broth and coconut milk is packed with ingredients that support your body in multiple ways:

  • Bone Broth: Rich in collagen, minerals, and amino acids, bone broth supports gut health, joint health, and overall immunity.
  • Turmeric & Ginger: Both are natural anti-inflammatory powerhouses that help reduce inflammation and boost your immune system.
  • Garlic & Onion: These aromatics are loaded with antioxidants and compounds that support heart health and immunity.
  • Coconut Milk: Provides healthy fats that help your body absorb fat-soluble vitamins and give the soup a creamy, satisfying texture without dairy.
  • Lime: Adds vitamin C and a refreshing brightness that helps your body absorb nutrients from the soup.
  • Carrots & Rice: Provide fiber, vitamins, and minerals, making the soup nourishing, filling, and easy to digest.

Together, these ingredients create a bowl that’s comforting, nourishing, and supportive of your overall wellness — perfect for cozy nights or anytime your body needs a gentle boost.

How to make Healthy Chicken Soup (Step-by-Step)

Step 1:If cooking on the stovetop: heat a large stockpot or Dutch oven over medium heat and add coconut oil. When coconut oil is melted, add the diced onion, carrots, and celery, and cook until they begin to soften, about 5-7 minutes, stirring frequently. Add minced garlic and ginger and cook until fragrant, about 1 minute.

Step 2:When the vegetables are fork-tender, add the chicken, turmeric, salt, pepper, garlic powder, dried ginger, and celery seed (if not using fresh garlic, ginger, and celery). Pour the bone broth over the chicken, vegetables, and seasonings.

Step 3:Cover the pot and increase the stove temperature to medium-high until the soup begins to boil. When it starts to boil, reduce the oven temperature to medium-low and let the soup simmer for 20-30 minutes, or until the chicken is cooked through and the vegetables are tender.

Step 1:If using a slow cooker: heat coconut oil in a medium-sized skillet over medium heat. Add the onions, carrots, and celery, and cook until they begin to soften, about 5-7 minutes, stirring frequently. Add minced garlic and ginger and cook until fragrant, about 1 minute.

Step 2:Transfer the vegetables to the slow cooker and add the chicken, turmeric, salt, pepper, garlic powder, dried ginger, and celery seed (if not using fresh garlic, ginger, and celery). Pour the bone broth over the chicken, vegetables, and seasonings. Cook the soup on low for 6 hours or high for 3 hours.

Step 6: When the soup is cooked, remove the chicken from the soup and shred with two forks or chop with a knife. Return the chicken to the soup and stir in coconut milk and lime juice. Serve over warm jasmine rice and enjoy!

Tips & Variations

  • Swap the rice: Try cauliflower rice for a low-carb option, or quinoa for added protein.
  • Add leafy greens: Stir in spinach, kale, or Swiss chard at the end of cooking for extra nutrients and color.
  • Boost the flavor: Add fresh herbs like cilantro or parsley, a pinch of chili flakes, or a drizzle of sesame oil for a flavor twist.
  • Meal-prep friendly: Cook in bulk and portion into containers for an easy grab-and-go lunch or dinner.

Serving Suggestions

  • Serve hot with fresh lime wedges and a sprinkle of chopped cilantro or green onions.
  • Pair with a slice of crusty bread, sourdough naan, or a light salad to make it a complete meal.
  • Add a soft-boiled egg on top for extra protein and richness.
  • Garnish with a drizzle of coconut milk or a sprinkle of toasted seeds for visual appeal and texture.

Storage & Reheating

  • Fridge: Store in an airtight container for up to 4 days.
  • Freezer: Portion into freezer-safe containers and freeze for up to 3 months.
  • Reheating: Warm gently on the stove over low heat, stirring occasionally. If the soup thickens too much, add a splash of bone broth or water.
  • Tip: If adding rice or grains, store separately when freezing for the best texture, then combine when reheating.
